SCOBY Update: She's Doing Great!

11/7/2019

My baby scoby is getting big. She’s kinda in her teenage stage. Once she grows some more, the original scoby will separate from her then I can have two functioning scobys. Most all of the peoples of the earth have consumed fermented food in their diet. Mead from Egypt, Tepache from Mexico, Natto from Japan, Kimchi from Korea, and sauerkraut from China are a small sampling of the types of foods made with fermentation. They are mostly fermented with the help of lactic acid bacteria from lactobacillus as well as other yeast and fungus.
It has a good flavor. Light and bright w that fermented punch. I’m still letting it do it’s thing until it gets a bit stronger. The cool weather slows down the process.
